These savoury keto-friendly egg muffins are packed with crispy bacon, creamy avocado, and melted cheese, making them a perfect breakfast or snack. They are easy to prepare and loaded with healthy fats to keep you full and energised.

Ingredients (Serves 6)

  • 6 large eggs
  • 4 rashers of bacon, cooked and crumbled
  • 1 ripe avocado, diced
  • ½ cup shredded cheddar cheese
  • ¼ cup double cream
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder
  • 1 tbsp chopped chives

Instructions

  1. Preheat oven to 180°C (350°F) and grease a muffin tin with butter or olive oil.
  2. Whisk eggs in a bowl, then add double cream, salt, pepper, and garlic powder.
  3. Stir in crumbled bacon, diced avocado, shredded cheese, and chopped chives.
  4. Pour mixture evenly into muffin tin compartments, filling each about ¾ full.
  5. Bake for 15-18 minutes until the eggs are set and slightly golden on top.
  6. Cool slightly before removing from the tin. Serve warm or store in the fridge for up to 3 days.
