This rich and creamy keto broccoli and cheese soup is a perfect low-carb comfort meal. Packed with cheesy goodness and healthy fats, it’s both satisfying and easy to make.

Ingredients (Serves 4)

  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 3 cups broccoli florets
  • 3 cups chicken or vegetable broth
  • 1 cup double cream
  • 2 cups shredded cheddar cheese
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • 2 rashers of crispy bacon, crumbled (for garnish)
  • 1 tbsp chopped parsley (for garnish)

Instructions

  1. Melt butter in a saucepan over medium heat. Add garlic and onion, sauté until fragrant.
  2. Add broccoli and broth, then bring to a boil. Reduce heat and simmer for 10 minutes until the broccoli is tender.
  3. Blend the soup with an immersion blender until smooth, or leave some chunks for texture.
  4. Stir in double cream, cheese, salt, pepper, and paprika, then mix until smooth. Simmer for 5 more minutes.
  5. Serve hot, garnished with crispy bacon and parsley.
