This rich and creamy keto broccoli and cheese soup is a perfect low-carb comfort meal. Packed with cheesy goodness and healthy fats, it’s both satisfying and easy to make.
Ingredients (Serves 4)
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 small onion, chopped
- 3 cups broccoli florets
- 3 cups chicken or vegetable broth
- 1 cup double cream
- 2 cups shredded cheddar cheese
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- 2 rashers of crispy bacon, crumbled (for garnish)
- 1 tbsp chopped parsley (for garnish)
Instructions
- Melt butter in a saucepan over medium heat. Add garlic and onion, sauté until fragrant.
- Add broccoli and broth, then bring to a boil. Reduce heat and simmer for 10 minutes until the broccoli is tender.
- Blend the soup with an immersion blender until smooth, or leave some chunks for texture.
- Stir in double cream, cheese, salt, pepper, and paprika, then mix until smooth. Simmer for 5 more minutes.
- Serve hot, garnished with crispy bacon and parsley.
