Ingredients

Duck Breast

  • 2 duck breasts
  • 1 tsp Himalayan salt
  • Air fryer

Salad

  • 4 cups mixed salad leaves
  • 1/2 red onion, finely chopped
  • 1/2 cucumber, chopped
  • 2 cherry tomatoes, halved or quartered

Dressing

  • 2 tbsp apple cider vinegar
  • 2 tbsp walnut oil
  • 2 tbsp extra virgin olive oil
  • 2 tbsp mustard (no added sugars)

Instructions

Preparing the Duck Breast

  1. Preheat the air fryer to 375°F (190°C).
  2. Season the duck breasts with Himalayan salt on both sides.
  3. Place the duck breasts in the air fryer, skin side down, and cook for 8 minutes.
  4. Flip the duck breasts and cook for an additional 8 minutes.
  5. Once cooked, remove the duck breasts from the air fryer and let them rest for a few minutes before slicing.

Preparing the Salad

  1. In a large salad bowl, combine the mixed salad leaves, chopped red onion, chopped cucumber, and cherry tomatoes.
  2. In a small bowl or jar, mix together the apple cider vinegar, walnut oil, extra virgin olive oil, and mustard until well combined.

Assembling the Salad

  1. Slice the rested duck breasts into thin slices.
  2. Drizzle the prepared dressing over the salad and toss gently to combine.
  3. Divide the salad evenly between two plates.
  4. Arrange the sliced duck breast on top of the salad.
