These keto-friendly stuffed bell peppers are packed with savoury minced beef, melted cheese, and aromatic herbs. They make a satisfying low-carb meal full of flavour and healthy fats.

Ingredients (Serves 4)

  • 4 large bell peppers (red, yellow, or green)
  • 500g minced beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp oregano
  • ½ cup canned chopped tomatoes (sugar-free)
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Cut bell peppers in half lengthwise and remove seeds. Place in a baking dish.
  3. Heat olive oil in a pan and sauté onion and garlic until softened.
  4. Add minced beef and cook until browned. Season with salt, pepper, paprika, and oregano.
  5. Stir in chopped tomatoes and simmer for 5 minutes.
  6. Fill bell peppers with the beef mixture and top with cheddar and Parmesan.
  7. Bake for 20 minutes until the cheese is melted and golden.
  8. Garnish with parsley and serve warm.
