This keto-friendly garlic butter shrimp with zucchini noodles is a quick and flavourful dish, rich in healthy fats and protein while keeping carbs low.

Ingredients (Serves 2)

  • 250g shrimp, peeled and deveined
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 medium courgettes (zucchini), spiralised
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Sauté garlic for 30 seconds until fragrant, then add shrimp, salt, pepper, and red pepper flakes.
  3. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove from the pan and set aside.
  4. Melt butter in the same pan, then add zucchini noodles. Toss for 1-2 minutes until just tender.
  5. Return shrimp to the pan, add lemon juice, and mix well.
  6. Serve immediately, garnished with fresh parsley.
