This keto-friendly garlic butter shrimp with zucchini noodles is a quick and flavourful dish, rich in healthy fats and protein while keeping carbs low.
Ingredients (Serves 2)
- 250g shrimp, peeled and deveined
- 2 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 2 medium courgettes (zucchini), spiralised
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional)
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a pan over medium heat.
- Sauté garlic for 30 seconds until fragrant, then add shrimp, salt, pepper, and red pepper flakes.
- Cook shrimp for 2-3 minutes per side until pink and opaque. Remove from the pan and set aside.
- Melt butter in the same pan, then add zucchini noodles. Toss for 1-2 minutes until just tender.
- Return shrimp to the pan, add lemon juice, and mix well.
- Serve immediately, garnished with fresh parsley.
