Ingredients (Serves 6)
- 6 large eggs
- 4 rashers of bacon, cooked and crumbled
- 1 ripe avocado, diced
- ½ cup shredded cheddar cheese
- ¼ cup double cream
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp garlic powder
- 1 tbsp chopped chives
Instructions
- Preheat oven to 180°C (350°F) and grease a muffin tin with butter or olive oil.
- Whisk eggs in a bowl, then add double cream, salt, pepper, and garlic powder.
- Stir in crumbled bacon, diced avocado, shredded cheese, and chopped chives.
- Pour mixture evenly into muffin tin compartments, filling each about ¾ full.
- Bake for 15-18 minutes until the eggs are set and slightly golden on top.
- Cool slightly before removing from the tin. Serve warm or store in the fridge for up to 3 days.
