This creamy and satisfying keto-friendly chicken alfredo replaces traditional pasta with fresh zucchini noodles, keeping it low in carbs while delivering all the rich flavours of the classic dish.

Ingredients (Serves 2)

  • 2 medium chicken breasts
  • 2 tbsp olive oil
  • 2 medium courgettes (zucchini), spiralised
  • 2 tbsp butter
  • 1 cup double cream
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • 1 tbsp chopped parsley

Instructions

  1. Season chicken with salt, pepper, and oregano.
  2. Heat olive oil in a pan over medium heat, then cook chicken for 6-7 minutes per side until golden and cooked through. Set aside.
  3. Melt butter in the same pan, then sauté garlic for 30 seconds.
  4. Add double cream and Parmesan, stirring until smooth and creamy. Simmer for 2 minutes.
  5. Toss in zucchini noodles and cook for 1-2 minutes until just tender.
  6. Slice chicken and place over the zucchini noodles. Garnish with parsley and serve.
