This creamy and satisfying keto-friendly chicken alfredo replaces traditional pasta with fresh zucchini noodles, keeping it low in carbs while delivering all the rich flavours of the classic dish.
Ingredients (Serves 2)
- 2 medium chicken breasts
- 2 tbsp olive oil
- 2 medium courgettes (zucchini), spiralised
- 2 tbsp butter
- 1 cup double cream
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp dried oregano
- 1 tbsp chopped parsley
Instructions
- Season chicken with salt, pepper, and oregano.
- Heat olive oil in a pan over medium heat, then cook chicken for 6-7 minutes per side until golden and cooked through. Set aside.
- Melt butter in the same pan, then sauté garlic for 30 seconds.
- Add double cream and Parmesan, stirring until smooth and creamy. Simmer for 2 minutes.
- Toss in zucchini noodles and cook for 1-2 minutes until just tender.
- Slice chicken and place over the zucchini noodles. Garnish with parsley and serve.
