Ingredients (Serves 2)
- 3 large eggs
- ¼ cup coconut flour
- ¼ cup double cream
- 1 tbsp melted butter
- ½ tsp baking powder
- ½ tsp vanilla extract
- ¼ tsp salt
- 1 tbsp powdered erythritol (optional)
- Butter or coconut oil for frying
Instructions
- Whisk eggs, double cream, butter, and vanilla extract in a bowl.
- Sift in coconut flour, baking powder, salt, and erythritol, mixing until smooth. Let the batter sit for 5 minutes to thicken.
- Heat a non-stick pan over medium heat and grease with butter or coconut oil.
- Pour small amounts of batter into the pan and cook for 2-3 minutes until bubbles form. Flip and cook for another 1-2 minutes.
- Serve warm with sugar-free maple syrup and fresh berries.
