Ingredients (Serves 2)

  • 3 large eggs
  • ¼ cup coconut flour
  • ¼ cup double cream
  • 1 tbsp melted butter
  • ½ tsp baking powder
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • 1 tbsp powdered erythritol (optional)
  • Butter or coconut oil for frying

Instructions

  1. Whisk eggs, double cream, butter, and vanilla extract in a bowl.
  2. Sift in coconut flour, baking powder, salt, and erythritol, mixing until smooth. Let the batter sit for 5 minutes to thicken.
  3. Heat a non-stick pan over medium heat and grease with butter or coconut oil.
  4. Pour small amounts of batter into the pan and cook for 2-3 minutes until bubbles form. Flip and cook for another 1-2 minutes.
  5. Serve warm with sugar-free maple syrup and fresh berries.
