Ingredients
Duck Breast

- 1 tsp Himalayan salt
- Air fryer

Instructions
Preparing the Duck Breast
- Preheat the air fryer to 375°F (190°C).
- Season the duck breasts with Himalayan salt on both sides.
- Place the duck breasts in the air fryer, skin side down, and cook for 8 minutes.
- Flip the duck breasts and cook for an additional 8 minutes.
- Once cooked, remove the duck breasts from the air fryer and let them rest for a few minutes before slicing.
Preparing the Salad
- In a large salad bowl, combine the mixed salad leaves, chopped red onion, chopped cucumber, and cherry tomatoes.
- In a small bowl or jar, mix together the apple cider vinegar, walnut oil, extra virgin olive oil, and mustard until well combined.

- Slice the rested duck breasts into thin slices.
- Drizzle the prepared dressing over the salad and toss gently to combine.
- Divide the salad evenly between two plates.
- Arrange the sliced duck breast on top of the salad.
