These keto-friendly stuffed bell peppers are packed with savoury minced beef, melted cheese, and aromatic herbs. They make a satisfying low-carb meal full of flavour and healthy fats.
Ingredients (Serves 4)
- 4 large bell peppers (red, yellow, or green)
- 500g minced beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp oregano
- ½ cup canned chopped tomatoes (sugar-free)
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 180°C (350°F).
- Cut bell peppers in half lengthwise and remove seeds. Place in a baking dish.
- Heat olive oil in a pan and sauté onion and garlic until softened.
- Add minced beef and cook until browned. Season with salt, pepper, paprika, and oregano.
- Stir in chopped tomatoes and simmer for 5 minutes.
- Fill bell peppers with the beef mixture and top with cheddar and Parmesan.
- Bake for 20 minutes until the cheese is melted and golden.
- Garnish with parsley and serve warm.
